La Gallinara Genovese Pesto is prepared following the traditional recipe. The pesto is not pasteurised and is why their pesto has a vivid green colour. La Gallinara only use PDO Genovese Basil, and is transformed within a few hours from its harvest, in order to preserve nutritional properties.
