Sala Vialone Nano rice comes from an area near Verona, a region well-known for rice cultivation. This variety has an extraordinary capacity to absorb liquid, and hence flavour from the stock it's cooked in.
Both carnaroli and vialone nano, as well as being the best rice for risotto, are very versatile in the kitchen and can be used in soups, cold in salads or as a side.
