La Gallinara Pesto Genovese is prepared following the traditional recipe. The pesto is not pasteurised and is why their pesto has a vivid green colour. La Gallinara only use PDO Genovese Basil, and is transformed within a few hours from its harvest, in order to preserve nutritional properties.

An extremely tasty sauce that not only goes well with pasta, but also with cold veal and poultry, on mozzarella and in vegetable soups.

Ingredients: Olive Oil, Genovese Basil D.O.P. (26%), Grana Padano Cheese (Milk, Rennet, Preservative: Lysozyme from Egg, Salt), Roman Pecorino (Milk, Rennet, Salt), Garlic, Cashew Nuts, Salt, Pine Nuts, Plant Fibre, Acidity Regulator: Citric Acid.

La Gallinara

In the small village of Albenga, about 70 km west of Genoa, lies the headquarters of La Gallinara, named after the offshore island, where whole crowds of chickens were once raised, le galline. Their location is the centre of Ligurian basil country, harvested in June and July, when the large-leaved and delicately shiny herbs have reached their peak. Here you will find perfect conditions: mild climate, fertile, rich soils and a culinary tradition based on the incomparable taste of this much loved sauce.
