La Gallinara Taggiasca Olives are small green, black or purple coloured olives, harvested and selected among the hills of the Western Ligurian Riviera.
The nutiness and slight bitterness of the Taggiasca Olive from Liguria is pleasantly accentuated by the brine. There remains a mild, round taste in the mouth, which simply needs grissini and a piece of young cheese. A good aperitif.

La Gallinara
In the small village of Albenga, about 70 km west of Genoa, lies the headquarters of La Gallinara, named after the offshore island, where whole crowds of chickens were once raised, le galline. Their location is the centre of Ligurian basil country, harvested in June and July, when the large-leaved and delicately shiny herbs have reached their peak.
