Finocchiona is a typical Tuscan cured meat of very ancient origins. Fennel, in addition to giving a unique and highly recognisable flavour, had a very "practical" purpose in the past: salt, used in the preservation of meat, was very expensive, so it was preferred to use fennel which partly hid the flavour of the salami.
